We find that most people like to receive as many types of steaks as possible with this exquisitely tasty beef. The following is what we have found to be the most popular cuts.
Steaks cut 1 in thick and include the following cuts:
Upgrade to 1.5" Thick Steak Optional (Ribeye/Strips)
Upgrade thickness to 1.5" thick will reduce your streak qty counts.
Ribeye / 12 - 1" thick packages
New York Strip / 11 - 1" thick packages
Filets 1.50 Thick / 8 packages
Top Sirloin / 6 packages
Bavette / 4 packages
Flat Iron Steaks / 8 packages
Chuck Eye Steak / 4 packages
Denver Steak / 4 packages
Flank Steak / 1 package
Inside Skirt Steak / 1 package
Outside Skirt Steak / 1 package
Roasts. 2-3 Lb
Round, Rump, Sirloin Tip Roasts 6 / packages NOTE OPTION: ( or have cut into Steaks)

Approximately 125 1 pound packages estimating weight give or take 125lbs
Can do ¼, 1/3 or ½ lb patties for $1.25 per package extra charge. ( comes out of original estimating weight 125 Lbs)
Marrow bones may be cut for an additional $5.00 per package and will be cut into boats. Length wise.
You may also add stew meat if you would like. 1 lb packages.
Purchasing Tips:
The Bone Question: Choosing “boneless” will give you more room in the freezer but you can leave your Ribeyes “Bone in” if you would like for more flavor and you can also use the bones in stocks.
Thickness: At this volume, it is possible to go with 1.50 thickness on your premium steaks. (Ribeye/Strips) to prevent overcooking. (There is a slight up charge for this) This option does however reduce the number of overall steaks.
Odd” Bits:
It is likely that you can receive the Liver, Whole Tongue, the Oxtail (highly prized) the heart and Beef Cheeks. Please ask. While a ½ beef needs to be split, it is possible the party receiving the other ½ of this animal may not wish to keep the “odd bits”. We will do our best to accommodate.
Storage tip our ½ beef will require approx 20 cubic feet of freezer space. You can expect approx. 300 lbs of beef.
